Chicken Lollypop

Chicken lollypop is one of my favorite appetizer because it is spicy and full of flavor. These chicken lollipops are lip smacking! It’s a very easy recipe and is much affordable to make at home! Chicken lollipop is an Indian Chinese cuisine. Chicken lollipop is, essentially a frenched chicken leg, where in the meat is cut loose from the bone end and pushed down creating a lollipop appearance. This is one of kid’s favorites, as it is very delicious with a combo of any sauce or dips.

Ingredients

  • 6 chicken lollypops
  • Bread crumbs for crispiness (optional)
  • 1 tablespoon of ginger-garlic paste
  • Salt as per taste
  • ½ teaspoon of crushed black peppercorns
  • ½ tablespoon of soy sauce
  • 1 tablespoon of chopped ginger and chopped garlic
  • 1 tablespoon of red chilli paste
  • ¼ teaspoon of garam masala powder
  • ¼ cup of all-purpose flour
  • ¼ cup of corn flour
  • Cooking oil for deep frying

Method / Directions

  1. Add the chicken lollypops in a mixing bowl. If you are wondering how to make these chicken lollypops, you can make them using chicken wings. I’ll try to post a video on how to make lollypops using chicken wings after few days.
  2. Add ginger garlic paste.
  3. Add some salt.
  4. Add ¼ teaspoon of crushed peppercorns.
  5. Also add soy sauce.
  6. Give it a nice mix.
  7. Marinate the chicken lollypops for 15 minutes.
  8. Before preparing the batter for the chicken lollypops, heat up the cooking oil in a pan for deep frying on a low flame.
  9. Now prepare the batter for our chicken lollypops.
  10. Take another mixing bowl and add chopped ginger and garlic.
  11. Add Red chilli paste. Red chilli paste will give the colour and spice to the chicken lollypops.
  12. Add all-purpose flour.
  13. Add Corn flour.
  14. Add a little bit of salt.
  15. Add ¼ teaspoon of garam masala powder.
  16. Add some water and make a nice thick batter.
  17. The batter is ready as well as the hot cooking oil in a pan. Make sure your cooking oil is not very hot, it should be medium hot
  18. Now dip the marinated chicken lollypops into the batter and roll it in bread crumbs. Deep fry them until they are golden brown in colour.
  19. If you don’t have bread crumbs then you can simply dip my marinated chicken lollypops into the batter and fry them in the oil.
  20. You want your chicken lollypops to be cooked very well inside, so fry it on a medium flame. Fry them for 3 to 4 minutes.
  21. Don’t want to brown them too much.
  22. Alright, the chicken lollypops are done. Take them out and put it on a serving plate.
  23. For garnishing, add spring onion greens on top of our lollypops, also put some onion rings and sliced lemon.

Red Chili Paste

To enhance the color of Indian foods like curries and kebab, you can use either an artificial coloring agent or natural food colors. I like to use natural food color. One of them is red chili paste. So I’m going to show you how you can home-made red chili paste which is very simple to make.

Ingredients

  • Dry Red Chilies – 10 to 15

Directions

So for this, you need dehydrated Kashmiri red chilies. These are the ones which gives you a very good color to your recipe. If you don’t find Kashmiri red chilies, you can use any dry red chilies to make the red chili paste.

First remove the stem and tear them up and then remove the entire seeds from the red chili.

Removing the seeds means the removing most of the spiciness from the red chilies because we want to keep the color but not the spiciness.

By the way, you may need to use a pair of gloves while touching the red chili seeds.

Now with just the skin of these dry red chilies, add them into a pan with hot water in it. Boil them for 8 to 10 minutes until they become soft. Add a little bit of vinegar as it helps to bring out the color of red chilies. Adding vinegar is optional.

When the red chilies are soft, take them out and put it in a mixer.

Grind them into a fine paste. If required, add a little bit of water to make it a fine paste. The paste should not be very thick consistency and very thin consistency.

Ok our red chili paste is ready and you can use it right away or you can freeze it and use it for 3 to 4 months. You can store this for 10 to 15 days, if you put it in a jar and cover it with oil.
