Palak Paneer


Palak Paneer is an Indian cottage smooth, creamy, delicious spinach gravy. This is an easy and healthy recipe. It is very easy to prepare and can be made in so many ways. 

Don't blanch the spinach otherwise, the nutrients will be lost. 

Palak Paneer is one of the most loved North Indian recipes that is eaten with roti, paratha, naan, jeera rice, ghee rice or even with plain rice. 

Ingredients

  1. Paneer - 200 g (cut into cubes)
  2. Palak - 2 cups (stems discarded and rinsed)
  3. Cooking oil - 1 tbsp + 2 tbsp
  4. Green chilies - 3 to 4
  5. Onions - 1 cup (finely chopped)
  6. Garlic- 12 cloves
  7. Ginger - 1 inch (chopped)
  8. Turmeric powder - 1/4 tsp
  9. Tomato - 1 big (chopped)
  10. Cashew nuts - 10
  11. Garam masala powder - 1/4 tsp
  12. Cumin Seeds - 1 tsp
  13. Bay leaf - 1
  14. Green cardamoms - 2
  15. Red chili powder - 1 tsp
  16. Coriander powder - 1/2 tsp
  17. Salt as needed
  18. Fresh cream - 2 tbsp (optional)

Direction/Method

  1. Take a pot and add 2 liters of water.
  2. Allow the water to boil.
  3. When the water is boiling, add 2 cups of rinsed palak with discarded stems and boil it for about 2 to 3 minutes.
  4. Transfer the palak into a bowl that contains cold water.
  5. Allow the palak to cool down completely.
  6. Take a pan and add a tbsp of cooking oil.
  7. When the cooking oil is hot enough, add 1 tsp of cumin seeds.
  8. When the cumin seeds start to crackle, add 12 garlic cloves, 1 inch of chopped ginger, 3 green chilies, 2 chopped onions, and 10 cashew nuts.
  9. Sauté them for a minute.
  10. Add a tomato that has been chopped and sauté it for about 2 minutes until the tomatoes become soft.
  11. Switch off the stove and allow them to cool down completely.
  12. When these ingredients are not hot anymore, transfer the fried ingredients and boiled palak into a blending jar.
  13. Blend them into a smooth puree and if required, add some water.
  14. When the puree is ready, Keep it aside.
  15. Using the same pan, add 2 tbsp of cooking oil.
  16. Allow the cooking oil to heat for some time on a low flame.
  17. When the cooking oil is hot enough, add a bay leaf, 2 cardamoms, 1/4 tsp of turmeric powder, 1/2 tsp of coriander powder, 1 tsp of red chili powder,
  18. Mix them well.
  19. Add pureed spinach and mix it well.
  20. Add some water to adjust gravy consistency and mix it well.
  21. Cover the lid and cook for about 2 to 3 minutes on a low flame.
  22. Add 1/4 tsp of garam masala powder and salt as per taste.
  23. Mix it well.
  24. Add 2 tbsp of fresh cream and mix it well.
  25. Add 200 grams of paneer cut into cubes, mix it well.
  26. Cover the lid and cook for about 2 minutes on a low flame.
  27. Mix it again and turn off the stove.

That's it! Palak paneer is ready to be served with roti, paratha, naan, jeera rice, ghee rice or even with plain rice.
