This is one of famous vegetarian starters that can be made in under 20 minutes.
Mushrooms are very low in calories but are loaded with trace minerals and micro-nutrients and is an ideal addition to our meal.
Ingredients
- Mushroom - A pack
- Peppercorns - 2 tbsp
- Cumin - 1 tsp
- Cloves - 2
- Fenugreek seeds - 1/2 tsp
- Cooking oil - 2 tbsp
- Onions - 1, medium sized, finely chopped
- Ginger - 1/2 tsp, finely chopped
- Garlic - 1 tsp, finely chopped
- Capsicum - 1/2 sliced
- Salt - as per taste
- Water - a little
- Green chilies - 2, sliced
- Curry leaves - few
Direction / Method
- Take a frying pan and add 1 tsp of peppercorns, 1 tsp of cumin, 1/2 tsp of fenugreek seeds and 2 cloves.
- Pan fry them for few seconds.
- Transfer them into a mixing jar and blend them into a fine powder.
- Keep the powdered spices aside.
- In the same frying pan, add 2 tbsp of cooking oil and heat the cooking oil on low flame.
- When the oil is hot enough, add 2 sliced green chilies and few curry leaves.
- Sauté them until the curry leaves become crispy.
- Transfer them into a plate and keep them aside.
- In the same pan, with the same cooking oil, add 1 finely chopped onions and sauté them for a minute.
- Add 1/2 tsp of finely chopped ginger and 1 tsp of finely chopped garlic.
- Sauté them for few seconds.
- Add a pack of chopped and fresh mushrooms.
- Mix and fry them for 2 minutes.
- Add 1/2 of the sliced capsicum.
- Mix and fry them for a minute.
- Add powdered spices and salt to taste.
- Mix them well.
- Sauté them for about 1 to 2 minutes until they get roasted.
- Lastly, garnish with fried curry leaves and green chilies.
- That's it! Mushroom Peppery Fry is ready to be served.
