Tomato Puree


Tomato Puree can be used with wide variety of sauces and gravies (For e.g., Pasta sauce, Pizza sauce, vegetable gravies such as butter paneer / soup or anything that requires tomato puree). Using just tomatoes and natural coloring agents such as beet, you can make homemade tomato puree.

Ingredients
  1. Five Tomatoes
  2. Natural coloring agent (Beet) / Artificial coloring agent (Red)
Method / Directions
  1. Wash your tomatoes.
  2. Add water into a pot and boil.
  3. When the water is hot, put the tomatoes into the pot.
  4. Boil them for at least 5 to 10 minutes on a medium flame.
  5. Heat them until the skin of the tomatoes starts to break.
  6. When the skin of the tomatoes has broken, put the tomatoes in cold water.
  7. You can start to peel the skin and it should come off easily when they are cold enough.
  8. Cut the tomatoes into half.
  9. Put the tomatoes into a mixed and blend them.
  10. Add either natural coloring agent (beet) or an artificial coloring agent (red).
  11. Strain the tomatoes to remove the seeds and pulp.
No more preservatives, your homemade tomato puree is ready and it looks just like store purchased tomato puree. You can use this tomato puree for up to two week and if you freeze it, you can use it for 3 to 4 months.

Pizza Sauce


Pizza Sauce is an easy and quick recipe for a basic homemade pizza sauce with fresh tomato puree, garlic and basil. Just spread over a pizza base and top with cheese and vegetables to make a delicious pizza to serve and it is also great with pasta or to serve alongside meat, fish or tortilla, chappatis, naans or rotis. It is even healthier than the store bought pizza sauces which is filled with preservatives.

Pizza Sauce can be either made as a bit chunky or smooth. For smooth version, puree the tomatoes very well.

Ingredients
  1. 1/2 cup of Tomato Puree. (You can either prepare a homemade tomato puree or purchase from a store).
  2. 3 tablespoons of cooking oil or olive oil.
  3. Two tomatoes, finely sliced, with their skin removed. To remove their skin, you need to boil the tomatoes for at least 5 to 10 mins.
  4. Finely chopped capsicum - 1
  5. Finely chopped onion - 1
  6. Two cloves of garlic, finely chopped.
  7. 1 teaspoon of salt.
  8. 1/2 teaspoon of crushed pepper.
  9. 1/2 teaspoon of saunf powder. (Fennel Seeds Powder)
  10. 1/2 teaspoon of dry basil.
  11. 1/2 teaspoon of oregano.
  12. 1/2 teaspoon of dry chilly flakes.
  13. 1 teaspoon of dry chilly powder.
  14. 1/2 teaspoon of sugar.
Note - Dry Basil and Oregano are the most important ingredients to prepare the authentic Italian Pizza Sauce. They give you the rich flavor and nice aroma that you usually get an Italian Pizza sauce.


Method / Directions
  1. Add 3 tablespoons of cooking oil or olive oil in a pan and heat the pan on a medium flame.
  2. When the oil is hot, add finely chopped garlic and saute on a medium flame for a few seconds.
  3. Add finely chopped onions and saute for a minute.
  4. Add finely copped capsicum and saute for a few seconds.
  5. Add finely sliced tomatoes and saute for two minutes.
  6. Add the tomato puree and mix the ingredients.
  7. Add 1/2 teaspoon of oregano.
  8. Add 1/2 teaspoon of dry basil.
  9. Add 1/2 teaspoon of dry chilly flakes.
  10. Add 1 teaspoon of chilly powder.
  11. Add 1/2 teaspoon of crushed pepper.
  12. Add 1/2 teaspoon of saunf powder. (fennel seeds powder)
  13. Add 1/2 teaspoon of sugar.
  14. Add 1 teaspoon of salt.
  15. Saute the ingredients on a medium  flame for 4 to 5 minutes and mix them every now and then.
  16. When the oil starts to float on the top, then your pizza sauce is ready to serve.
  17. Put the sauce in a serving bowl.

Muskmelon Juice


Muskmelon Juice is very good for health as it contain a lot of vital nutrients. It cools the body during summers and it is also good for health. Musk melon is low in calories, low in saturated fat and low in cholesterol. Try this healthy summer drink recipe and you’ll feel refreshing.

Ingredients


  1. One Muskmelon, small to medium size.
  2. A glass of water.
  3. A piece of crushed jaggery.
  4. Two cardamom pods.
  5. Ice cubes.
  6. Honey (for garnishing)
  7. Sliced lemon (for garnishing)

Method / Directions


  1. To juice out the Muskmelon, you need to pick a good one which is not discolored, dented, puffy or have soft spots.
  2. Make sure you wash your muskmelon before using it.
  3. Cut the melon lengthwise and use the tip of a spoon to gently remove the seeds out.
  4. Peel the skin of the Muskmelon. Make them into pieces.
  5. Put these pieces into the mixer.
  6. Add crushed pieces of jaggery.
  7. Add two cardamom pods.
  8. Add 1 glass of cold water and blend the mixture.
  9. Strain the juice into a bowl and serve the juice in a serving glass.
  10. Add two ice cubes.
  11. For garnishing, add a pinch of honey and stick the sliced lemon on top of the glass.
  12. Enjoy the refreshing Muskmelon Juice!

Note - Muskmelon juice should be consumed within 15-20 minutes of extraction to prevent any oxidation and loss of nutrients.

ButterMilk




Buttermilk is one of the dairy drink. It is the left over liquid after churning butter out of cream. It is one of the fermented milk drinks which is drank commonly in warm climates, It is popular in Middle East, India and Southern United States.

Buttermilk is the best summer coolant and very healthy drink for the human health. Yogurt is the main ingredient in preparation of Buttermilk and it is a low fat drink. Yogurt is rich in calcium which is digestible by human body.

Buttermilk is very simple to prepare and a very old recipe in India. Buttermilk is also made during all religious occasions in India. Buttermilk is also mixed with rice and served in a full meal in India. Buttermilk is prepared using Yogurt either commercially purchased from a store or from the Yogurt made in home.

Below are the Ingredients
  • 1/2 cup of yogurt
  • 1 cup of cold water
  • Salt as per taste
  • 1/4 teaspoon roasted cumin powder and black pepper powder
  • finely chopped green chilies
  • finely chopped ginger
  • finely chopped onion
  • mint leaves (for garnishing)
  • coriander leaves (for garnishing)

Method / Directions
  1. Take 1/2 cup of yogurt and add it to a mixer.
  2. Add finely chopped onion.
  3. Add finely chopped green chilly.
  4. Add 1/4 teaspoon of of roasted cumin powder and black pepper powder.
  5. Add finely chopped ginger
  6. Add salt as per taste.
  7. Add a cup of cold water.
  8. Blend the ingredients well in the mixer.
  9. Using a strainer, strain the mixture into a bowl.
  10. Put the mixture in a serving glass and garnish it with coriander leaves, mint leaves, a green chili and put the ice cubes.
Alright, the buttermilk is ready to beat the heat in your body.
