Chicken Curry (Andhra Style)


Andhra style chicken curry recipe is a spicy, flavorful and mouth-watering curry. Andhra cuisines are popular for hot and spicy foods especially the foods made in Guntur region, Guntur, a small town in Andhra Pradesh is well known for its spicy foods. This is a rich curry with coconut and puppy flavored with good amount of spices. There are many versions of Andhra chicken curry. But I’m going to cook a general version of Andhra style chicken curry. The one thing which is common in Andhra style chicken curry is that they use poppy seeds and lemon juice to neutralize the spicy taste and they will bring down the body temperature produced by the spices and chicken. I made this recipe little spicier but, I’m going to give you all the recipe measurement for medium hot chicken curry. You can adjust the green chili and chili powder to your desired spice level. So, for a change from your regular style of chicken curry, try this Andhra style chicken curry, you will love this definitely. This requires a little bit of time to prepare. But it is a simple and easy to prepare recipe which goes best with steamed rice. Ok. Let’s take a look at the ingredients.


Ingredients: –

  1. Chicken 300 gm (Cleanly washed)
  2. Finely Chopped Onions 2 (medium sized)
  3. Sliced Green Chilies – 2
  4. Grated coconut – ½ cup
  5. Finely chopped ginger – 1/2 teaspoon
  6. Chopped garlic – 1 teaspoon
  7. Finely chopped Tomato – half
  8. Poppy Seeds – 2 tablespoons
  9. Cloves – 5
  10. Cinnamon sticks – 2
  11. Cardamom – 1
  12. Curry leaves – 1 tablespoon
  13. Coriander leaves – 1 tablespoon
  14. Cumin seeds – ½ teaspoon
  15. Coriander – 2 tablespoons
  16. Chili powder – 2 tablespoons
  17. Turmeric powder – 1/2 teaspoon
  18. Lemon juice – 1/2 teaspoon
  19. Salt as per taste
  20. Cooking Oil – ½ cup
  21. Water – 1 cup


Method / Directions

First marinate the cleanly washed chicken. 
  • Add ¼ teaspoon of turmeric powder, a little bit of salt, add 1/2 tablespoon of chili powder and then we will add lemon juice to the chicken.
  • Mix it well and let it marinate for about 30 minutes and we will set this aside until we need it.

Now prepare our garam masala powder. The reason why I’m preparing garam masala powder and not using store a purchased powder is because a fresh home-made garam masala powder gives more flavor to your curry.
  • Add 2 tablespoons of coriander to the pan and then add 2 cinnamon sticks, 5 cloves and a cardamom.
  • Also add ½ teaspoon of cumin seeds and saute the ingredients on a low fame.
  • When you start to smell the flavor of the spices, it is ready to go into the mixer. Put the ingredients into a mixing jar and make a fine garam masala powder.
  • We will the garam masala powder when it is required.

Next, prepare the poppy seeds and coconut paste.                         
  • Add 2 tablespoons of poppy seeds to the pan and saute them until it starts to flutter or become golden color.
  • When the poppy seeds are golden in color, take them out immediately and add into the mixing jar.
  • Add a little bit of water and make a fine paste.
  • Now add ½ cup of grated coconut into the mixing jar and make a fine paste. Add a little bit of water to make a fine paste.
  • When the poppy seeds and coconut paste is ready, keep it aside to use it later.

Now we are going to prepare ginger garlic and green chili paste. I could have used a store purchased ginger garlic paste. But I’m preparing fresh homemade paste because it gives more flavor to your curry.
  • Add chopped garlic and finely chopped ginger in a mixing jar.
  • Also add a sliced green chili and make a fine paste by adding a little bit of water to make a fine paste.
  • Keep ginger garlic and green chili paste in a cup and keep it aside.

It is time to prepare the curry.
  • Add ½ cup of oil into a pan.
  • When the oil is hot, add our finely chopped onions and we will add our remaining sliced green chilies.
  • Add a little bit of salt and mix the ingredients. Fry them till they become transparent.
  • When they become transparent, add ¼ teaspoon of turmeric powder and add 1 ½ tablespoons of chili powder. Mix them well and saute for a minute.
  • Add our marinated chicken into the pan and give it a nice mix. If required, add a little bit of cooking oil.
  • Cover the pan with a lid and let it cook for 5 minutes on a medium flame.
  • Mix your ingredients every now and then to avoid scorching.
  • After 5 minutes, add finely chopped tomatoes and mix it one more time
  • Add 1 cup of water and cover the pan to cook for another 15-20 minutes on a medium flame.
  • When the chicken is cooked, add curry leaves and mix it well.
  • Add ginger garlic and green chili paste.
  • Add fresh homemade garam masala powder and mix it well.
  • Finally, we will add poppy seeds and coconut paste into the curry. Mix it well.
  • Cover the pan and cook it for another 5 minutes. Mix your ingredients every now and then to avoid scorching.
  • Now when the oil starts to float on the top, the curry is ready.
  • Add coriander leaves for garnishing.         

Alright, the chicken curry is ready to be served. This curry goes best with steamed rice or chapatti.

Egg Roll


Egg rolls are very easy to make and a perfect appetizer. It is a simple egg recipe and there are many varieties of egg rolls. But we are going make a simple Korean style egg roll.

Ingredients

  1. 3 eggs
  2. 1 tablespoon milk
  3. 1 tablespoon carrot, finely chopped
  4. 1 tablespoon onion, finely chopped
  5. 1 tablespoon green part of spring onion, finely chopped.
  6. Finely chopped red chili – ¼ teaspoon
  7. Ground pepper – ½ teaspoon
  8. Salt as per taste
  9. Cooking oil


Method / Directions

  1. Crack the eggs into a mixing bowl.
  2. Add 1 tablespoon of milk and ½ teaspoon of salt.
  3. Whisk your beaten egg until combined.
  4. This mixture will have a lot of cholesterol called chalaza. To remove it, you need to pass through your mixture using a fine mesh strainer.
  5. Add your finely chopped ingredients which are carrot, onion and green part of spring onion.
  6. Add ground pepper, finely chopped red chili and mix it well.
  7. Grease cooking oil on a skillet and heat the skillet on a low flame.
  8. Add half of the egg mixture and cook it over a low heat.
  9. Spread the egg mixture evenly across the skillet.
  10. When it is half done, roll it half way up to the middle and move the omelette to the centre of the skillet.
  11. If there is less oil, lightly grease the skillet with cooking oil each time you roll up the omelette.
  12. Add in ¼ cup of egg mixture to the sides of the unrolled omelette.
  13. Again cook until half done and roll half way up.
  14. Move the egg roll to the centre of the skillet and add remaining egg mixture and cook until half done.
  15. Now roll all the way up and transfer the egg roll to a cutting board.
  16. Don’t cut the egg roll immediately. Let the egg roll cool and cut into bite-size pieces.

Now egg rolls are ready to be served.

Carrot Halwa (with Kova) {Gajar Ka Halwa}


Carrot halwa is one of the most popular halwa recipes of India. It is made in almost all festive occasions in India. Carrot halwa is a classic Indian dessert that goes for any celebration occasion or season. It is an evergreen Indian sweet dessert made all over India. There are many variations of making carrot halwa recipe. But we will see how to prepare carrot halwa with kova. Kova is nothing but condensed milk.

Ingredients

  1. Finely grated Carrot (washed) – 2 cups
  2. Butter – 2 tablespoons
  3. Cashew nuts, chopped almonds and raisins – ½ cup
  4. Milk – 1 cup
  5. Kova (condensed milk) – 2 tablespoon
  6. Cardamom (Skinned and Crushed) – 2
  7. Sugar – ½ cup

Method / Directions


  1. On a pan, put 2 tablespoons of butter.
  2. Let the butter melt on a medium flame.
  3. When the butter is melted, add ½ cup of cashew nuts, chopped almonds and raisins.
  4. Fry them till cashew nuts are golden brown and take them out and put it in a cup.
  5. To the same pan which still has the melted butter, add 2 cups of finely grated carrot.
  6. Keep mixing the carrot with the melted butter for at least 2 or 3 minutes.
  7. Add 1 cup of milk and mix it well.
  8. Add ½ cup of sugar and mix it well.
  9. Cook the mixture for at least 5 to 10 minutes until it becomes a thick mixture. The carrots should drink in all the milk.
  10. Stir at regular intervals to prevent scorching.
  11. When the carrots are soft, add 2 tablespoons of kova which is condensed milk.
  12. Mix it well till your kova melts.
  13. Stir it again at regular intervals to prevent scorching for 5 minutes. When the kova and melted butter starts to float, carrot halwa is ready.
  14. Add crushed cardamoms and mix it well.              
  15. Serve it hot on a serving bowl.

Alright, carrot halwa is ready and it looks delicious.

Banana Muffins


Do you love banana bread? If yes, I’m sure you will also like banana muffins.

Banana Muffins are easy to make and it can be made any time of the year. As a snack or with a meal, these moist muffins go over great with the kids. The muffins fill them up and get them to eat nutritious bananas at the same time. These are delicious muffins and easy to make and the family loves them!

Ingredients 

  1. All-purpose flour – 1.5 cups
  2. Sugar powder – ¾ cup
  3. Bananas – 3
  4. Beaten egg – 2
  5. Butter (melted) – 1/3 cup
  6. Chocolate chips – 1 cup
  7. Vanilla extract (optional for flavour) – 1/4 teaspoon
  8. Brown cinnamon powder (optional for flavour) – 1 teaspoon
  9. Salt – ¼ teaspoon
  10. Baking soda – ¼ teaspoon
  11. Baking powder – 1 teaspoon

Method / Directions


  1. Using a fine mesh strainer, add 1.5 cups of all-purpose flour and strain it into a bowl.
  2. Add 1 teaspoon of baking powder.
  3. Add ¼ teaspoon of baking soda.
  4. Add ¼ teaspoon of salt.
  5. Add 1 teaspoon of brown cinnamon powder.
  6. Mix these dry ingredients all together.
  7. Add 1 cup of chocolate chips.
  8. Mix it well and set it aside.
  9. In a separate bowl, using a fork, mash 3 bananas until they become smooth and ignore little chunks of bananas.
  10. Add ¾ cup of sugar powder.
  11. Add one beaten egg and mix it well.
  12. Add ¼ teaspoon of vanilla extract and give it a nice stir.
  13. Add 1/3 cup of melted butter and mix it well, till it becomes a nice batter.
  14. Put the dry ingredients and mix the batter. Don’t add the dry ingredients all at once instead add them little by little and Give it a nice mix.
  15. Add some more of dry ingredients and mix it well. When the mixture is thick, add another beaten egg.
  16. Add remaining dry ingredients and give it a nice mix until it becomes a smooth batter.
  17. Fill the silicon muffin cups about 2/3 with the mixture. Make sure to coat the muffin cups with some butter. Don’t fill the muffin cups completely because the muffin will raise out of the cups.
  18. Place the muffin cups on an oven tray and pre-heat the Oven for 250 degrees Celsius.
  19. Bake the muffins for about 15 to 20 minutes and after 20 minutes of backing the muffins should be ready.
  20. Use a pick and put it inside the muffin and if it comes out clean then your muffins are ready. The other way is to lightly tap on them and they will spring back
  21. Remove the silicon muffin cups and garnish the muffins with some cherry toping and chocolate topping.

Egg Chop



Egg chop is a tea time or evening snack which is a very yummy, irresistible delicious deep fried snack which tastes good to your taste buds. You can fill your appetite by making the delicious egg chops quickly and easily. Egg Chop is a snack which is liked by small kids.

Ingredients

  1. Potato – 2 (Boiled and mashed)
  2. Egg – 2 (boiled and cut into halves)
  3. Egg – 1 (Beaten)
  4. Onion –  1 (fried and chopped)
  5. Dry red chili – 3 (fried, small / broken)
  6. Capsicum –  1 (chopped and fried)
  7. Coriander leaves
  8. Coriander powder – 1/2 teaspoon
  9. Garam masala powder – 1/4 teaspoon
  10. Salt as per taste
  11. Bread Crumbs – 1 cup
  12. Cooking oil for deep frying.

Method / Directions

  1. In a mixing bowl add your mashed potatoes and the mixture of fried onions, fried red chili and fried capsicum.
  2. Break the fried red chilies into pieces.
  3. Add coriander leaves.
  4. Add coriander powder.
  5. Add garam masala powder.
  6. Add salt as per taste.
  7. Mix the ingredients well to make a nice potato mixture.
  8. Our potato mix is ready.
  9. Take a small portion of the mixture on your palm and make it flat by pressing it.
  10. Place one egg halves on the flat mixture and cover it with more potato mixture on top of it.
  11. Make a fine ball to look like an oval shaped “chop” and if needed add more potato mixture to cover the egg completely. 
  12. Repeat the same steps to make 4 chops.  
  13. Set your chops aside on a plate for 10 minutes.
  14. Heat the cooking oil on a pan and on a medium flame.
  15. Dip each chop in the beaten egg and coat it with bread crumbs.
  16. Place the chop in the hot oil and fry them until golden brown.
  17. When your chops are golden brown, it is ready to be served.

Alright, your yummy egg chops are ready:-). Serve it with tomato and chilli sauce.

Egg Cheese Toast


Egg Cheese Toast is a breakfast food which is easy to make and it can be made within few minutes. This is a food which is mostly liked by small kids. 

Ingredients
  1. Bread - 1
  2. Egg - 1
  3. Sliced Tomatoes
  4. Sliced Onions.
  5. Sliced Capsicums.
  6. A layer of cheese.
  7. Cooking oil - 2 tablespoons
  8. Crushed Pepper Powder and Cumin Seeds Powder
  9. Salt as per taste.
  10. Finely chopped green chilies.
  11. Chopped coriander leaves.
Method / Directions
  1. On a pan, add 1 tablespoon of cooking oil.
  2. When the oil is medium hot, put the bread piece on the pan.
  3. Gently press the bread to the pan so that the bread is evenly toasted on one side.
  4. After 30 seconds, crack the egg on top of the bread.
  5. Using a spoon, beat the egg yolk lightly and try to spread it across the bread. Otherwise, the egg yolk will not be cooked properly.
  6. After 30 seconds, add 1/2 tablespoon of cooking oil on top of our toast.
  7. Using a spatula, flip the toast and press it gently.
  8. After few seconds, flip it again and remove the extra layer of the egg around the bread.
  9. Add a layer of cheese on the toast.
  10. Add tomato slices on top of the cheese.
  11. Add sliced onions.
  12. Add sliced capsicums.
  13. Add finely chopped green chilies.
  14. Add crushed pepper powder and cumin seeds powder.
  15. Add salt.
  16. Using spatula, press the vegetables gently to mix with the cheese.
  17. After a minute, add another 1/2 tablespoon of oil around the toast and move the toast for 2 or 3 times across all directions so that the toast absorbs oil.
  18. Wait for a minute and your egg cheese toast is ready to be served.
