Banana Muffins


Do you love banana bread? If yes, I’m sure you will also like banana muffins.

Banana Muffins are easy to make and it can be made any time of the year. As a snack or with a meal, these moist muffins go over great with the kids. The muffins fill them up and get them to eat nutritious bananas at the same time. These are delicious muffins and easy to make and the family loves them!

Ingredients 

  1. All-purpose flour – 1.5 cups
  2. Sugar powder – ¾ cup
  3. Bananas – 3
  4. Beaten egg – 2
  5. Butter (melted) – 1/3 cup
  6. Chocolate chips – 1 cup
  7. Vanilla extract (optional for flavour) – 1/4 teaspoon
  8. Brown cinnamon powder (optional for flavour) – 1 teaspoon
  9. Salt – ¼ teaspoon
  10. Baking soda – ¼ teaspoon
  11. Baking powder – 1 teaspoon

Method / Directions


  1. Using a fine mesh strainer, add 1.5 cups of all-purpose flour and strain it into a bowl.
  2. Add 1 teaspoon of baking powder.
  3. Add ¼ teaspoon of baking soda.
  4. Add ¼ teaspoon of salt.
  5. Add 1 teaspoon of brown cinnamon powder.
  6. Mix these dry ingredients all together.
  7. Add 1 cup of chocolate chips.
  8. Mix it well and set it aside.
  9. In a separate bowl, using a fork, mash 3 bananas until they become smooth and ignore little chunks of bananas.
  10. Add ¾ cup of sugar powder.
  11. Add one beaten egg and mix it well.
  12. Add ¼ teaspoon of vanilla extract and give it a nice stir.
  13. Add 1/3 cup of melted butter and mix it well, till it becomes a nice batter.
  14. Put the dry ingredients and mix the batter. Don’t add the dry ingredients all at once instead add them little by little and Give it a nice mix.
  15. Add some more of dry ingredients and mix it well. When the mixture is thick, add another beaten egg.
  16. Add remaining dry ingredients and give it a nice mix until it becomes a smooth batter.
  17. Fill the silicon muffin cups about 2/3 with the mixture. Make sure to coat the muffin cups with some butter. Don’t fill the muffin cups completely because the muffin will raise out of the cups.
  18. Place the muffin cups on an oven tray and pre-heat the Oven for 250 degrees Celsius.
  19. Bake the muffins for about 15 to 20 minutes and after 20 minutes of backing the muffins should be ready.
  20. Use a pick and put it inside the muffin and if it comes out clean then your muffins are ready. The other way is to lightly tap on them and they will spring back
  21. Remove the silicon muffin cups and garnish the muffins with some cherry toping and chocolate topping.
