Neer Dosa | ನೀರ್ ದೋಸೆ | नीर दोसा

This recipe is super soft Neer Dosa, which is made with rice batter and originated from the cuisines of Udupi and Mangalore. A famous dosa variety and it's a basic, quick, and easy morning breakfast meal that doesn't require urad dal batter. It is traditionally eaten with coconut-based gravies such as kori gassi and channa gassi, but it also goes well with spicy kara chutney.

Neer dosas are crepes that are thin, lacy, and lovely. These are famous Mangalorean breakfast dishes that can be found in practically all Karnataka eateries and tiffin centers. In addition to being vegan and gluten-free, Their texture is quite delicate. As a result, they go nicely with just about every curry or chutney.

Ingredients

  1. Dosa rice (or any aged rice) - 1. cup
  2. Water - as needed
  3. Coconut - 1/4 cup, sliced
  4. Salt - to taste

Direction

  1. Take a bowl, add a cup of dosa rice, and add some water to wash the rice.
  2. Wash the rice well and then drain the water.
  3. Wash the rice twice.
  4. Add some water and soak for 5 hours or overnight.
  5. Transfer the soaked rice into a blending jar.
  6. Add little water and blend them into a smooth paste.
  7. Into the jar, add 1/4 cup of sliced coconut.
  8. Blend it again nicely and into a smooth paste.
  9. Add a little more water if required.
  10. Transfer the batter into a bowl.
  11. Add water little by little and make a thin and flowing consistency batter like water.
  12. Add salt to taste and mix it again.
  13. Heat the dosa tawa, grease it with a little cooking oil using an onion slice.
  14. Take a ladle of batter and pour it on the tawa as round as possible.
  15. Cover the tawa and cook the dosa for a minute.
  16. When done, transfer the dosa into a plate.
  17. Prepare the remaining dosas.
  18. That's it! Neer Dosa is ready to be served with the chutney or your choice.

Garlic Pepper Rice | ಬೆಳ್ಳುಳ್ಳಿ ಮೆಣಸಿನ ಅನ್ನ


Pepper rice takes less than 10 minutes to prepare. This pepper rice is aromatic and delicious. If you have some precooked rice on hand, it'll be a breeze to make. A pickle goes nicely with this, and the two make a great combo. Pepper Rice is a South Indian quick rice meal that involves cooking leftover rice with a lot of black pepper. This variety of rice recipes is perfect for breakfast and is an instant rice dish. Pepper rice is the simplest of rice dishes.

Ingredients

  1. Rice - 1 big bowl
  2. Cooking oil - 1.5 tbsp
  3. Ghee - 1 tsp
  4. Cashewnuts - few
  5. Mustard seeds- 1/2 tsp
  6. Cumin seeds- 1/2 tsp
  7. Chana dal - 1 tbsp
  8. Urad dal - 1/2 tsp
  9. Onion - 1, finely chopped
  10. Red chili - 2, chopped
  11. Curry leaves - few
  12. Black peppercorns - 1 tsp, crushed
  13. Salt - as per taste

Preparation

  1. Take a pan, add a tbsp of cooking oil or a tsp of ghee.
  2. Allow the cooking oil or ghee to heat on a low flame.
  3. When the oil or ghee is hot enough, add a few cashew nuts and fry them till they become golden in color.
  4. Transfer the fried cashew nuts to a small plate and keep them aside.
  5. Using the same oil or ghee, add 1/2 tsp of mustard seeds and allow them to crackle.
  6. Add 1/2 tsp of cumin seeds and a tbsp of chana.
  7. Fry them a little.
  8. Add 1/2 tsp of urad dal and fry them for a few seconds.
  9. Add a few curry leaves, a finely chopped onion, a few crushed garlic, and 2 chopped dry red chilies.
  10. Sauté them until onions come golden in color which would typically take 2 minutes on a low flame.
  11. Add a tsp of crushed pepper and salt as per taste.
  12. Mix them well.
  13. Add a big bowl of rice or rice for 2 persons.
  14. Mix them well until well mix rice with a tempering.

Chicken Tikka [Tawa-made, No Oven]


Tandoori chicken tikka is one of India's most popular chicken starters and appetizers. It is also well-known all across the world. Tikka refers to grilled cubes or a chunk of meat. Cubed chicken tikka is marinated in a spiced yogurt mixture before being cooked to perfection. Proper marination is the key to a mouth-watering juicy, tender, and delicious chicken tikka. The chicken not only absorbs the tastes of the spices and herbs while marinating, but it also tenderizes naturally without the need for a chemical tenderizer. 

Tandoori Chicken Tikka, also known as Murgh Tikka in North India. This traditional snack recipe is fantastic. This original snack recipe takes less than 10 minutes to prepare and is perfect for parties or get-togethers. This simple recipe may be made in the oven, on the stovetop, in an air fryer, or on an outside barbecue. But I'll show you how to make this recipe without over and on tawa. When it comes to gatherings and appetizers, tikka recipes are a hit.

Ingredients

  1. Chicken - 250g, boneless, cut into tikka pieces
  2. Yogurt - 2 tbsp
  3. Ginger garlic paste - 1 tsp
  4. Turmeric powder - 1/4 tsp
  5. Cumin powder - 1/2 tsp
  6. Garam masala powder - 1/4 tsp
  7. Red chili powder - 1 tbsp
  8. Black pepper powder - 1/4 tsp
  9. Lemon juice - 1 tsp
  10. Cooking oil - 1 tbsp + 1 tbsp
  11. Red food color - a little
  12. Corn flour - 1 tsp (optional)
  13. Salt - to taste

Direction

  1. Take a bowl, add a tsp of ginger garlic paste, add 2 tbsp of yogurt, 1/4 tsp of turmeric powder, 1/2 tsp of cumin powder, 1/4 tsp of garam masala powder, a tbsp of red chili powder, 1/4 tsp of black pepper powder, and a tsp of lemon juice.
  2. Mix these ingredients well.
  3. Add a tbsp of cooking oil, a little red food color, and salt to taste.
  4. Mix it again.
  5. Add 250 grams of boneless chicken (cut into tikka pieces) and mix them until they are coated well with spices.
  6. Cover the bowl and set for 2 hours in a refrigerator.
  7. After 2 hours, skewer the chicken tikka pieces nicely.
  8. The tikkas are ready to be roasted.
  9. Take a tawa and add a tbsp of cooking oil.
  10. Allow the cooking oil to heat for some time on medium flame.
  11. Place the chicken tikkas on the tawa & roast them well until chicken cooks.
  12. Flip and roast them well, until all the sides are roasted well.
  13. That's it! Chicken Tikka is ready to be served with green chutney and onion rings.

Veg Pizza (tawamade) & Pizza Sauce (homemade)

Forget about Domino's and Pizza Hut; you can now create a superior pizza at home, and without using an oven! This method will show you how to make pizza on your stove in the simplest way possible. The crust comes out crispy on the outside and tender on the inside. The pizza sauce demonstrated in this video is another element that elevates this pizza to new heights. Enjoy this vegetarian pizza with your favorite toppings and plenty of cheese ;)

How to make pizza?

Pizza Dough Ingredients

  1. All-purpose flour - 2 cups
  2. Baking powder - 1/2 tsp
  3. Baking soda - 1/4 tsp
  4. Sugar - 1 tsp
  5. Salt - 1/4 tsp
  6. Curd - 1/4 cup
  7. Water - as needed
  8. Cooking oil - 1 tbsp

Pizza Making Ingredients

  1. Onion - few slices
  2. Capsicum - a few slices
  3. Tomato - few slices
  4. Fresh corns - few
  5. Mozzarella cheese - 1 cup, grated
  6. Chili flakes - 1/4 tsp
  7. Mixed herbs - 1/4 tsp
  8. Cooking oil - a tbsp

To make Pizza dough

  1. Take a bowl, add 2 cups of all-purpose flour, 1/2 tsp of baking powder, 1/4 tsp of baking soda, 1 tsp of sugar and salt to taste.
  2. Mix these ingredients well.
  3. Add 1/4 cup of curd and mix it well.
  4. Add little by little water to make a soft and smooth dough.
  5. Add a tbsp of cooking oil on top of the dough.
  6. Knead the dough well.
  7. Cover the bowl and rest it for about 30 minutes.

To make Pizza

  1. After 30 minutes, knead the dough again.
  2. Take half of the dough and make a round dough ball.
  3. Take a chapati roller and dust it a little.
  4. Place the dough ball on the chapati roller.
  5. Roll it thick and make round edges.
  6. Place the rolled pizza base on a Tawa.
  7. Set the pizza round shape again.
  8. Press the dough using fingers and create the rim at the edges of the dough.
  9. Take a fork and poke some holes on the pizza base.
  10. Apply the pizza sauce uniformly.
  11. Add a cup of grated mozzarella cheese, few sliced tomato, few capsicum slices, some onion slice, few fresh corns, 1/4 tsp of mixed herbs, 1/4 tsp of chili flakes and add a tsp of cooking oil around the edges of pizza.
  12. Pizza is ready to be baked and place the tawa on the stove.
  13. Close the pan & cook it for 8 to 10 mins on a low flame.
  14. Ensure that the pizza is cooked properly.
  15. That's it! Veg Pizza is ready, let's slice it.
Enjoy this Tawa-made and homemade Veg Pizza with your choice of toppings and loads of cheese.

How to make pizza sauce?

Pizza Sauce Ingredients

  1. Cooking oil - 1 tbsp + 1 tbsp
  2. Onion - 1, sliced
  3. Tomatoes - 2, sliced
  4. Garlic pods - few
  5. Kashmiri dry red chilies - 5
  6. Water - as needed
  7. Red chili powder - 1 tsp
  8. Oregano - 1/2 tsp
  9. Salt - to taste
  10. Tomato ketchup - 1 tbsp

To make Pizza sauce

  1. Take a pan, add a tbsp of cooking oil, a sliced onion, a few garlic, and 5 Kashmiri dry red chilies.
  2. Sauté them for 2 minutes on a low flame.
  3. Add 2 sliced tomatoes and fry them for a minute.
  4. Turn off the flame and let it cool for some time.
  5. Transfer them into a blending jar and add some water.
  6. Blend these ingredients into a nice and smooth puree.
  7. Take a pan, add a tbsp of cooking oil and allow the oil to heat on a low flame.
  8. Add blended puree and mix it well.
  9. Add a little water to get the sauce consistency.
  10. Add a tsp of red chili powder, 1/2 tsp of oregano, salt to taste, and a tbsp of tomato ketchup.
  11. Mix them well and cook until the sauce becomes a little thick.
  12. That's it! Pizza Sauce is ready.

Rava Idly | ರವೆ ಇಡ್ಲಿ | रवा इडली


Rava idli is a famous breakfast dish that was started in Karnataka's Tiffin centers. It's a twist on the traditional Idli, made with semolina, curd, and a few spices instead of rice. Idlis are steamed cakes, and rava signifies semolina.

It's quick and easy to make rava idli because it's an instant recipe that doesn't require any grinding or fermentation. Semolina or sooji batter is used to make this simple and healthful south Indian idli dish.

It's a great morning breakfast recipe because you don't have to worry about grinding and fermenting the batter. A rava idli recipe is a light, soft, and delicious idli recipe.

Ingredients

  1. Rava (Bombay rava) - 1.5 cup
  2. Curd - 3/4 cup
  3. Carrot - 1, grated
  4. Cooking oil - 1 tbsp
  5. Mustard seeds - 1 tsp
  6. Cumin seeds - 1/2 tsp
  7. Chana dal - 1 tbsp
  8. Curry leaves - few
  9. Ginger - 1/4 inch, crushed
  10. Green chili - 1, finely chopped
  11. Asafoetida- a pinch
  12. Coriander leaves - few, chopped
  13. Salt - to taste
  14. Soda - 1/4 tsp
  15. Cashewnuts - few
  16. Water - as needed

Direction

  1. Take a frying pan, add a tbsp of cooking oil and let the oil heat on a low flame.
  2. When the oil is hot enough, add a tsp of mustard seeds and allow them to crackle.
  3. Add 1/2 tsp of cumin and a tbsp of chana dal, a finely chopped green chili, few chopped curry leaves, and 1/4 inch of crushed ginger.
  4. Sauté them for a minute.
  5. Add a pinch of asafoetida and mix it well.
  6. Add a cup of rava and roast it until the aromatic comes out.
  7. Turn off the flame and let it cool down completely.
  8. Transfer the rava into a bowl.
  9. Add 3/4 cup of curd, a grated carrot, few chopped coriander leaves, salt to taste, 1/4 tsp of cooking soda, and a glass of water.
  10. Mix these ingredients well.
  11. Close the bowl and rest it for about 15 minutes.
  12. After 15 minutes, open the lid & give it a mix.
  13. Add little water to get smooth idli consistency.
  14. Rava idly batter is ready & keep it aside.
  15. Take an idly plate and grease it with a little oil.
  16. Place the cashew nuts.
  17. Pour the rava idly batter and prepare the other idli plates as well.
  18. Keep these idli plates aside.
  19. Take an idly cooker, add 1.5 glasses of water, allow the water to boil on a medium flame.
  20. Place the idly plates in the cooker.
  21. Cover the lid but don’t lock.
  22. Cook it for about 15 minutes & turn off the flame.
  23. Open the cooker lid & rava idlis are ready.
  24. Take out the idlis with a help of a spoon by scooping it from the edges.
  25. That's it! Rava Idly is ready.
  26. Serve it with chutney and saagu.
It's spiced and savory, so it can be eaten on its own, but it's even better with a chutney or sambar dip.

Raw Banana Tawa Roast | ಬಾಳೆಕಾಯಿ ತವಾ ಫ್ರೈ

Raw Banana Tawa Roast (ಬಾಳೆಕಾಯಿ ತವಾ ಫ್ರೈ) is a South Indian side dish to serve with rice and it is a crispy, spicy raw banana roasted with rice flour and spices on tawa. It's a popular south Indian stir-fry recipe, and it's also one of the most underappreciated dry curry recipes.

One of the health benefits of raw banana recipe is that it is full of minerals and is said to be beneficial for diabetes. They are also high in fibre, which aids in constipation.

Because it's so simple and easy to make, taking less than 15 minutes.

Ingredients

  1. Raw banana - 2
  2. Kashmiri red chili powder - 1 tsp
  3. Turmeric powder - 1/2 tsp
  4. Coriander powder - 1 tsp
  5. Cumin Powder - 1/2 tsp
  6. Garam masala powder - 1/4 tsp
  7. Lemon juice - 1 tsp
  8. Rice flour - 4 tbsp
  9. Oil - 2 tbsp
  10. Salt to taste 

Direction / Method

  1. Take a small bowl, add a tsp of red chili powder, 1/2 tsp of turmeric powder, 1/4 tsp of garam masala powder, a tsp of coriander powder & salt to taste.
  2. Mix these ingredients well.
  3. Keep the spicy mixture aside.
  4. Take the raw bananas, cut the edges and peel the skin.
  5. Cut the banana in half and slice the banana length-wise and little thick.
  6. Sprinkle the spice powder on the banana slices.
  7. Apply the spice powder on the banana slices.
  8. Add a tsp of lemon juice on the banana slices and mix them well.
  9. Rest them for about 10 minutes.
  10. Take 4 tbsp of rice flour & coat the banana slices with the rice flour.
  11. Keep them on a plate
  12. Banana slices are ready for tawa fry.
  13. Take a tawa and allow to heat on a medium flame.
  14. Add a tsp of cooking oil and place the banana slices one by one.
  15. Pour a tsp of cooking oil on top of the banana slices and roast them evenly.
  16. Flip & roast them well on both sides.
  17. Roast them until they are crispy and golden brown in color.
  18. Transfer the roasted banana slices to the plate.
  19. That's it! Crispy Banana Tawa Roast is ready to be served.
Made with raw plantains and additional spices, this is a delicious and spicy rice side dish.

Cluster Beans Ricebath | Gorikayi Ricebath | ಗೋರಿಕಾಯಿ ಬಾತ್


Gorikayi ricebath is a spicy, tangy, and tasty Karnataka-style cluster bean ricebath that can be made at home. This dish's texture and flavour are enhanced by the addition of coconut. Fresh coconut, spices, and cooked rice are used in this simple recipe. This is a terrific lunchbox dish as well.

In only a few simple steps, you'll be able to make the healthy cluster beans ricebath. Cluster beans are extremely beneficial to one's health. They can aid with diabetes and bone strength.

Ingredients

For grinding

  1. Fresh Coconut - 1/4 cup, sliced
  2. Black peppercorns - 1/2 tsp
  3. Cumin seeds - a tsp
  4. Dry red chilies - 3
  5. Kashmiri red chilies - 3
  6. Turmeric powder - 1/4 tsp
  7. Water - a little

For gorikayi rice bath

  1. Cooking oil - 2 tbsp
  2. Mustard - 1/4 tsp
  3. Fresh green peas - 1/4 cup
  4. Chana dal - 1 tbsp
  5. Cashew nuts - few
  6. Red chili - 2 no
  7. Bay leaf - 1
  8. Curry leaves - few
  9. Asafetida - a pinch
  10. Cluster beans (Gorikayi) - 1 cup, chopped
  11. Jaggery - 1/2 tsp, powdered
  12. Salt - as per taste
  13. Tamarind - 1 tbsp, soaked
  14. Rice - a bowl, cooked

Preparation

  1. Take a blending jar.
  2. Add 1/4 cup of fresh coconut that has been sliced, 1/2 tsp of black peppercorns, a tsp of cumin, 2 to 3 dry red chilies, 3 numbers of Kashmiri red chilies, 1/4 tsp of turmeric powder, and little water.
  3. Blend them into a smooth paste.
  4. Keep the masala paste aside.
  5. Take a pan, add 2 tsp of cooking oil and allow the cooking oil to heat on a low flame.
  6. Add 1/4 tsp of mustard seeds and allow them to crackle.
  7. Add 1/4 cup of fresh green peas, a tbsp of chana dal & few cashew nuts.
  8. Sauté them for few seconds.
  9. Add 2 dry red chilies, a bay leaf, few curry leaves, and a pinch of asafetida.
  10. Sauté them a little.
  11. Add a cup of chopped cluster beans and sauté them for 2 minutes.
  12. Add blended masala paste.
  13. Mix and sauté them for a minute.
  14. Add 1/2 tsp of powdered jaggery and salt as per taste.
  15. Take a tbsp of soaked tamarind.
  16. Squeeze it well and take out extras.
  17. Pour the tamarind water into the pan.
  18. Mix them well and sauté them for 2 minutes on a low flame.
  19. Add a bowl of cooked rice & mix them well.
  20. Lastly, add few chopped coriander leaves and mix it again.
  21. That's it! Gorikayi Ricebath is ready.
Serve this bath with raita or coconut chutney.
